It is rye-bred. It contains different B group vitamins, which are necessary for our skin, hair, nails. You can read more about this here and here.
I am not a chemist. I don't know a theory why this works and how it cleans the hair, but I know a practice. I used to wash my hair with rye-bread, so I can tell you a result.
At first how you have to use it? Put near a half of rye-bread into the cup (it has to be rather big one -
put it on the hair, rubbing and massaging the scalp. Then cover your head with polyethylene cap and muffle with a towel. Hold this for 15-20 minutes. Then wash out bread from your hair (I have to say you'll need a lot of water to wash out it properly. But even if you live some crumbs in your hair, don't worry! - You'll comb it out easily after drying the hair.)
After this rinse your hair with some of herb decoctions of infusions.
That's all. There is nothing complicated here! You need only a little bit of patience and desire.
What my impressions after washing with rye bread? The hair became really soft and bright! But when I used it two times one after the other washing I felt that It dries my hair a little bit. So If you have dry hair - try to use it with natural oils, when normal - use it in 2-3 washings, when greasy one - you can try to use it more frequently.
It would be very useful and interesting when you'll share with your own experience of using rye-bread.
